Salmon Chowder

Yup! The salmon was just as good today as it was yesterday. We LOVE salmon chowder and it’s a little different each time I make it. Today’s version had quite a few “extra” ingredients that I ran across as I was cleaning out the fridge.

White Chicken Chili: comfort food for the next generation

One of our absolutely all-time favorite winter-time meals is white chicken chili. Years ago my mom got the recipe from Aunt Barb who doesn’t remember giving it to her. For a long while, every time any of her grown kids showed up for dinner, mom made white chicken chili. She often apologized for this, but [...]

That Wonderful Mushroom and Parmigiano Bruschetta Recipe

This was the appetizer that Auntie Ellen met us at the door with. After a day of traveling and eating fast food, this tasted unbelievably and and was EXACTLY what we all suddenly felt hungry for. (more…)

The organized chef: Part II

In my last post, I closed with an invitation for you to think through what your cooking style is, and what staple foods are essential to that repertoire. We’re going to jump off from there and talk about food planning. There are a number of different approaches to this, some of which I haven’t done.  [...]

Chinese Chicken Salad (on a roll now!)

Here’s another one that we really like a lot. This one does require cooked chicken, so it’s not the *perfect* hot weather salad. It’s not quite a no-cook meal but since it can be made up hours ahead of time in the cool of the morning, it still qualifies as a good hot weather option. [...]

Back from vacation: Laura’s Thai wraps

I can’t remember at the moment if Barb has already posted these, but I made them for dinner last night, and that’s reason enough to talk about them. Because Thai wraps can be found in many different incarnations, and I haven’t yet met one I didn’t like. (more…)

Slow-cooked BBQ Pork

Beautiful smells are already wafting through my kitchen and it’s only 9:00 AM. I’m halfway through making one of our favorite meals and by dinnertime, we’ll all be salivating something fierce! I will be the first to admit that this is NOT Carolina barbecue. I’m still baffled by the hows and whys of that method [...]

Grilled Salmon

There are a number of ways to grill salmon, but for me, this is the easiest. I try to buy salmon in big fillets to make cooking easier. Several months ago, I got salmon fillets on sale for $1.99 a pound. I bought 50 pounds of it and stuck it in my deep freeze. It [...]

Salmon Spinach Pie

Actually, the salmon was left over from our feast of grilled salmon last Sunday night. I’ll make sure I post that recipe next. There was enough salmon left that it begged to become another whole meal. So tonight was the night. (more…)

Clean-out-the-fridge Pasta

We spent a few days at a beach house with my brother and sister-in-law (first time at the Atlantic ocean for us!) and one of the evenings I had dinner duty. Because we had access to lots of fun seafood, I made my favorite pasta meal.
This pasta dish is much more method than recipe. [...]
