I attended a baby shower yesterday afternoon that featured some absolutely delicious munchies. My favorite items on the buffet were little round cheese biscuits. That’s what the hostess called them, but to MY eyes, they looked like little cheese cookies. These were delicious and I’m thinking that the next soup meal we have here will feature these tasty little morsels as accompaniament. So of course I asked for the recipe….
Cheese Biscuits
- 8 oz. finely grated sharp cheddar cheese
- 1 c. flour
- 1/4 very finely chopped pecans
- 1 stick (1/2 c.) melted butter
- 1/2 t. salt
- 1/4 t. cayenne pepper
- 2 strips of bacon, cooked very crispy and whirred fine in the food processor (optional)
Sift dry ingredients together. Stir in moist ingedients and mix thoroughly. Roll into 1 – 1.5 inch logs. Wrap logs and freeze for three hours.
Before baking, remove from freezer and let set for 20 minutes. Slice very thin (1/16 to 1/8 inch thick) and arrange on parchment on a cookie sheet. Bake at 350 degrees for 8 minutes. Let cool and use spatula to move biscuits to serving plate.
