Oh my. The whirlwind of the school year has arrived and life just hit warp speed at my house. The days of leisurely dinners are done until next summer, so it’s time to haul out ideas for fast dinners that aren’t fast food. One of our very favorite dinners is meatball subs. These delicious sandwiches [...]

Roasted vegetable bruschetta
It’s been brought to my attention that I never did post a recipe for the roasted vegetable bruschetta that Kirk and I love to make. It’s really easy, and it’s unbelievably fabulous. It also starts out as a wonderful side dish that regularly induces eye-rolling ecstacy at the dinner table–grilled marinated vegetables.

Simple Grilled Salmon That Never Fails to Please
My youngest two boys and I are still at the family cottage in Michigan; to our great delight, our cottage neighbor extended an invitation to the boys to go fishing with him at dawn. The boys leapt at the chance and willingly trundled out of bed before 6:00 AM. To his great delight, Jon vanquished [...]

Basic Pasta Salad for the Dog Days of Summer
How is it even POSSIBLE that we don’t have a very basic pasta salad here? Raise your hands if you can’t bear the thought of pot roast on a 90 degree/60% humidity day. If you cook the noodles in the morning and then put them in the fridge until it’s time to make dinner, you [...]

Concerned about High Fructose Corn Syrup?
I know lots of folks who are very concerned and vigilant about high fructose corn syrup as an ingredient in foods and drinks. We recently “discovered” that all sodas (pops, if you’re from certain parts of the country), including Coca Cola, in the Mexican market are bottled in Mexico and made with cane sugar. There’s [...]

What Kinda Pizza IZZAT?????
We were still replete with Michele’s wonderful jambalaya when Michael had his Great Brainstorm. He thinks it might be his best idea this year! In spite of the large quantities of jambalaya that we all consumed, the leftovers still filled three plastic containers. It was that leftover jambalaya that grabbed MIchael’s imagination.
Was there any reason [...]

Joyful Jambalaya
We’ve been celebrating for a whole week now! Our parents, Ron and Marilyn, are celebrating 50 years of marriage. Rather than a single reception or special dinner, we have all gathered on Lake MIchigan for a whole week of family time. Of course, OF COURSE, this time has been filled with excellent food. We all [...]
