Here’s another great recipe from the family cookbook of my friend Jeri–it originates with her Great Grandfather Fyhrie. I’m told that Norwegian meatballs is not an uncommon traditional dish for Christmas Eve, but it’s also served throughout the year, and is well-loved.

Cornbread Casserole
My friend Melissa brought this dish to a dinner party recently, and it was so good, people were wanting to crawl into the bowl to lick up the last crumbs. I begged her for the recipe, since that is what I do, and she graciously shared it with me.
