Last weekend, several families from our circle at church helped some friends to move out of their house. Several of us brought along food for lunch, so that the hosts would not have to feed such a large group in the middle of moving. My friend Mary brought along this pasta salad, and it was SOOOOOO good, I nearly thought I needed a third helping (or a fourth…) So naturally, I asked Mary for the recipe, and here it is, a perfect late-summer picnic potluck dish:
Curry Chicken Pasta Salad
- 2 large chicken breasts, cooked and cubed
- 4 c. cooked pasta–a short shape of some sort, like radiatore, campanelle, bowtie, or something similar
- 1 1/2 c. halved red grapes
- 1/4 c. chopped green onions
- 3/4 – 1 c. chopped celery
- 1 – 1 1/2 c. chopped, peeled apple
Dressing:
- 1/2 c. mayo
- 1/4 c. sour cream (I’ll be using fat free)
- 3 TBSP orange juice
- 2 TBSP honey
- 1 tsp. curry
- 1/4 tsp. salt
Toss salad ingredients together. Mix dressing and stir into salad. Can add 1 c. cashew or slivered almonds, mixed in or sprinkled on top.
Vegetarian Variation: Simply leave out the chicken altogether or substitute cubes of tofu for the chicken.

I am a big fan of curry chicken salad, and with pasta….well, that just smacks my lips!! Yum!!
