Jeanette’s Shortbread

Before I had children, I was a classroom teacher. My last year of teaching was one of the most difficult because I had a combination 5th-6th grade class. There was a little boy in the 5th grade half of the class named David. His mom, named Jeanette, had been born in Scotland and made the most delicious shortbread. Back then, I was sometimes shy about asking for recipes (hard to believe now!) and it took me awhile to work up the nerve to ask her for this recipe. I’m so glad I did! It’s a very simple recipe, but Jeanette assured me that it came straight from her grandmother in the old country:

Shortbread

Mix together:

  • 1 lb. butter, soft
  • 1 c. powdered sugar
  • 3 c. flour
  • 1 c. cornstarch

Roll out and place on a cookie sheet OR press into two pie plates. Bake at 300° for 20-25 minutes.
