This morning, Michael spied the very large bag of dried cranberries that Dave bought at Sam’s Club. Jon asked, “Is there any reason why we CAN’T make muffins?” Nate found muffin recipes for me…lots of them. So we made muffins. We decided that we need to do that way more often because they were delicious and oh-so-easy.
Cranberry Muffins
- 1 3/4 c. flour
- 3/4 c. sugar
- 3/4 t. salt
- 2 t. baking powder
- 3/4 c. milk
- 1/3 c. oil
- 1 large egg
- 1 c. dried cranberries (or raisins or chocolate chips or fresh cranberries or fresh blueberries or apple chunks or or or or…..)
- 1 t. almond extract (use vanilla if you’re adding something that would go better with that flavor, like chocolate chips)
- 1 T. orange zest (grated orange peel) (optional)
Stir together the dry ingredients. In a separate bowl or measuring cup, mix together oil, milk, egg, and almond extract. Add liquid ingredients to the dry ingredients all at once and stir until just mixed. Stir in cranberries and orange zest.
Grease a muffin tin and fill each cup 2/3 full with batter. Bake at 400° for about 20 minutes or until golden brown and the toothpick comes out clean. This recipe makes approximately 12 muffins. Eat the muffins hot out of the oven!
