I got an email from Auntie Michele with this important information: “This is some amazing Peanut Butter Fudge (if you are into that sort of thing, which I most certainly am!)
Peanut Butter Fudge
- 1/3 c butter
- 2 c brown sugar
- 1/2 c milk
- 1 c peanut butter (chunky or smooth)
- 1 tsp vanilla
- 3 c confectioner’s sugar (sifted to remove lumps)
Melt butter in a saucepan, add the brown sugar and milk. Cook until it boils and then 2 minutes longer, stirring constantly. Remove from heat and add vanilla and peanut butter until pb is melted in. Pour the mixture over the confectioner’s sugar, beat until smooth. Put it into an 8X8 pan. Place it in the frig to set and then cut into squares. I cut mine in pretty small pieces- it is really rich, but has been a huge hit with all of my fellow peanut butter fanatics who have tried it so far. You could, I suppose, drizzle some melted chocolate over these if you just miss the chocolate too terribly, but I think they are perfect just as they are.”
Just a disclaimer, Auntie Michele is NOT a chocolate fanatic. That means that I get wonderful recipes from her that normally I don’t even bother try! I tend to zero in on chocolate and the game is over before it starts. It’s good to have variety in a family!

Like I told Laura the other day, I’m so glad you have looked past my flaws to love and accept me anyway! I like to think I bring balance to the family.

Well of course….there is the dynamic of “more chocolate for me if you’re not eating it!”
Other than that, I have a hard time wrapping my mind around the idea of using balance and chocolate in the same sentence. But that’s why YOU’RE here!
