Using up the VERY last of the Thanksgiving leftovers

We’re definitely getting into that zone of leftovers getting to smell, taste, and look a little questionable. This is about the longest I like to leave things in the fridge. So today, 12-year-old Michael and I made SOUP. Oh my. What a fun thing. This soup comes complete with its own secret ingredient.

Turkey Sweet Potato soup

  • 3 large leftover sweet potatoes, cooked, peeled, and pureed (These potatoes had not been sweetened and spiced into the traditional Thanksgiving dish.)
  • 1 1/2 c. milk (almost to the end of its shelf life)
  • 2 cubes of chicken bouillion
  • 2 c. chopped up leftover turkey
  • 4 15-oz. cans of stewed tomatoes (found them in the mark-down section in the back of the grocery store, each marked $0.25)
  • 8 stalks of finely chopped leftover asparagus
  • 2 1/2 c. leftover Chipotle crab dip
  • 1 medium onion, chopped and sauteed in sesame oil with 2 T. of minced garlic until very brown
  • Enough water to make a thick soup

Put all the ingredients into a large stock pot and simmer for about an hour. DELISSSSSSHHHHHOUS! Michael and I agreed that the chipotle crab dip was our secret ingredient. It gave the soup and incredible flavor and nobody who tried it could guess that the dip was in there.

This is somewhat like the last sweet potato soup that I made, but I wanted to illustrate how I use WHATEVER is in the fridge. Should you MAKE chipotle crab dip to put in this soup? NO! That would make this an work-intensive meal and soup is not supposed to be that hard! But take a look at what’s hanging out in your fridge that you will end up dumping the day after tomorrow. Leftover green bean casserole? garlic mashed potatoes? What about leftover onion sour cream chip dip? or Thanksgiving gravy? Some flavors will dominate and entirely redirect the taste of the soup. For that reason, I stay away from adding broccoli or bell peppers. (I plan to puree those up and knead them into my next batch of bread instead!) Every pot of soup will taste different, but it’s such a fun adventure!
