When I was 18, I attended college 2082 miles away from home. That year was the first time in my life that I didn’t join my family for Thanksgiving dinner. Instead, I had the privilege of joining my mom’s younger brother and family. I clearly remember how delicious homemade food tasted after almost 3 months of college cafeteria food.
On Friday, Aunt Marge made the most delicious turkey casserole out of turkey leftovers and even back then, I knew I needed the recipe.
Aunt Marge’s Turkey Casserole
- 2 c. cooked, diced turkey leftovers
- 1 can cream of chicken soup
- 1/2 c. diced celery
- 2 T. diced onion
- 1/2 c. sliced, blanched almonds
- 1/2 t. salt
- 1 T. lemon juice
- 2/3 c. mayonnaise
- 3 chopped hardboiled eggs
- 3/4 c. crushed potato chips
Put half the potato chips in the bottom of a greased 2 quart casserole dish. Mix all the other ingredients together and pour into the casserole dish. Top with the other half of the potato chips, cover, and bake at 400° for 45 minutes.
A tasty alternative is to use a little leftover stuffing on the top–if you HAVE leftover stuffing. Breadcrumbs also work nicely.

I will try this. Every other recipe I have gotten from Marge is dog eared and stained with use. All have turned out to be family favorites and are usually the ones I take to pot lucks at church. Love, Joan

I remember when you came to our house that weekend. That was one of the first times I met you. This is always one of my favorite recipes, too. We were just talking about this recipe this week because I made a chicken dish that tasted like it.
