Cheddar/Green onion Biscuits

A new variation on an old theme (and we are ALWAYS looking for new variations, doncha know!) :

2 1/4 c. flour
2 1/2 t. baking powder
2 t. sugar
3/4 t. baking soda
1 t. salt
6 T. butter, chopped up coarsely
1 1/2 t. minced garlic
6 oz. grated sharp cheddar cheese
3 green onions (scallions) chopped finely
1 c. buttermilk

Combine dry ingredients. Cut in butter until the texture of coarse crumbs. Stir in cheese and scallions. Add buttermilk and stir just enough to mix. Do not overmix.

Drop onto greased cookie sheet (or pizza stone) and bake at 400 degrees for approx. 18 min. or until golden brown.

This recipe can also be doubled. If you make mini-biscuits, these make a great fingerfood for potlucks.

Optional: Add 4 oz. coarsely chopped green chiles or jalapeno peppers.
